Lemon Cream
- 2 eggs
- 90 grams Raw caster sugar
- 3 small lemons, juice
- 1 small lemon rind
- 100 grams thickened cream
- 30 grams Butter
- Make an ice bath (ice,water and rock salt)

Add eggs and raw caster sugar and blend until light and fluffy. Add lemon juice and zest blend 7 minutes, 80 degrees, speed 3 until it thickens and looks a little like pudding. Add butter gentle stir until melted. Put mixture into an ice bath, then once cool mix in the thickened cream.
Tip
Refridgerate for up to 3 days. Lovely with a scone.

The ice bath is just to speed up the cooling process. I normally pop in a separate bowl to cool. Hope this helped.
"Put mixture into an ice bath" Does this mean put the mixture into a seperate bowl and place that in the Ice Bath to cool?
