- 3 egg yolks
- 150 g sugar
- 280 g cream
- 220 g Milk
- 100 g lemon juice

I'm cooking this todayRecipe's preparation
Place all ingredients into TM bowl and cook for 7 minutes at 80°C on speed 4.
Pour mixture into a stainless steel bowl (or saucepan) and place in freezer overnight
until mixture is firm but NOT frozen. Remove ice cream from freezer and break up
into small pieces with a fork or spatula.
Place Into TM bowl and mix for 30 seconds on speed 9 using the spatula to assist and then for a further 20 seconds or until smooth on speed 4. Return to freezer. Serve when frozen through.

No this icecream is a slightly icy icecream. This is an old recipe and we have since updated how we write our recipes. You don't have to use a metal tray as along as it's a freezable container you are all good.
We do not recommend using Thickened cream due to the higher fat content. And it does need to be solid the first time round as you need the ice crystals to form before you beat it again.

i was expecting it to be really creamy so as it is a bit icy I’m not sure if I did everything correctly and I have a couple of questions?
why metal trays?
i used Pure Cream can I use Thickened?
does it matter that I put it back into the Thermomix for the first beating before it was solid?
and the 2nd beating it was too solid?
i will try it again soon
This ice-cream is delicious. It’s super cold in your mouth so only take small spoonfuls or you’ll get brain-freeze. Love it!

This is a great recipe, thank you. I didn't have lemons so used limes and it was delicious. I needed to mix it for just over a minute in the last step to get it really smooth because I think I must have left it in the freezer a bit too long. Worked fine anyway. Great ice cream base recipe so I'm going to try a whole lot more variations using this custard base.

Couldn't make sorbet as I was taking it to a friends for dessert so this was a perfect alternative
Fantastic recipe and so easy. The ice cream was so tangy - awesome!
