Ingredients

sweet shortcrust pastry

  • 100 g raw sugar
  • 130 g butter (TM)
  • 1/4 tsp salt
  • 2 egg yolks
  • 2 tbsp cold water
  • 250g flour

lime lemon cream filling

  • 230 g raw sugar
  • 3-4 limes - zest
  • 5 eggs
  • 240 g double cream
  • 140 g lime juice
  • 70 g lemon juice

Recipe's preparation

    sweet shortcrust pastry
  1. 1. place sugar into TM bowl and mill for 10sec on speed 9

    2. add butter salt and flour and mix for 10sec on speed 6 until mix resembles breadcrumbs

    3. add water and egg yolks and knead for 25 secs on interval speed to form a dough

    4. turn mix onto a floured breadmat and roll into a fat sausage about 25cm long

    5. wrap in cling film and place in fridge for at least 1 hr

    6. cut off slivers approx 5mm thick and line tart mould. Fit tog like a jigsaw then push together lining base and sides of mould

    7. place mould in freezer for at least 1hr

    8. blind bake tart for 12-15 mins at 180C until lightly coloured and just cooked through. (If frozen there is no need to use paper and bean/lentils etc)

  2. lime lemon cream filling
  3. 1. place sugar and rind into TM bowl and mill for 3 sec on speed 9

    2. add eggs and mix for 20 sec on speed 5

    3. add cream and juice and mix for 10 sec on speed 4

  4. tart
  5. 1. place tart mould onto a baking tray

    2. pour lime lemon filling into tart shell

    3. bake for 40-45 mins at 180C or until filling is set but still semi-wobbly in the middle

    I made this last night ... very nice. I halved the recipe and put into four individual mini tart pans. Lovely citrus flavour.
