- 400 grams coconut milk
- 60 grams honey
- 1/4 teaspoon himalayan sea salt
- 1 teaspoon Vanilla Bean Paste
- 2 eggs

- Place the pearl tapioca into the bowl, add the water and leave to soak for 30 mins. Do not drain the water after soaking
- Add the coconut milk, honey, salt, vanilla bean paste and lightly beaten eggs into the bowl and mix on [img title="counter-clockwise operation" height="" width=""]https://www.recipecommunity.com.au/sites/all/modules/contrib/smileys/packs/thermomix/counterclock.png[/img]/sp 2/20sec
- Insert the butterfly and cook for 12mins/90deg/[img title="counter-clockwise operation" height="" width=""]https://www.recipecommunity.com.au/sites/all/modules/contrib/smileys/packs/thermomix/counterclock.png[/img] speed 2
- Pour into serving glasses and refrigerate serving dishes.
Serve warm or chilled with sliced mango and passionfruit. - Cut mango into pieces and mix sp 6 for 45secs.
Once tapioca has cooled, pour the mango puree on top.
To make the pudding
Tip
Chocolate Tapioca:add 2 tablespoons of Raw Cacao with extra 2 tablespoons of sugar when adding the milk Dairy Free:Replace the milk with unsweentened coconut milk or almond milk
