  • 1 egg white
  • 400 grams ice cubes

Recipe's preparation

  1. Pre-freeze coconut cream in ice cube tray.

    Blitz sugar on Speed 9 for 10 seconds.

    Add mango and blitz on Speed 9 for 10 seconds.  Add coconut cream and egg white and blitz on Speed 9 for 10 seconds.  Add ice cubes and blend on speed 9 for a further 40 seconds to 1 minute. 

    Heat organic shredded coconut in microwave for 1 minute til crispy - serve sprinkled on top.

    Can add - chopped macadamias and fold through.

    OMG ... made this tonight and it was amazing, I added a banana as well.  I don't think we will be buying icecrea anytime soon!

    i use honey instead of sugar  and egg, its less sweet but gives you a lovley flavour and smooth texture.
