Ingredients

Base

  • 190 g walnuts or almonds
  • 1 lemon, zested
  • 30 g coconut oil
  • 40 g dried goji berries
  • 40 g dried cranberries
  • 2 tsp Coconut sugar

Filling

  • 170 g raw unsalted cashews
  • 50 g cacao powder
  • 100 g coconut oil
  • 2 tbsp Coconut sugar
  • 2 tbsp Milk
  • 1 lemon, juiced
  • 500 g Frozen Berries

Recipe's preparation

    Here's how to make the magic happen......
  1. Soak cashews with filtered water for 2 hours.  Drain.

     

    Make the base by placing walnuts into the TM bowl and mill until finely ground for 30 sec/Sp 5. Set aside.

     

    Add coconut oil, goji berries and cranberries to TM bowl and chop for 15 sec/Sp 5.  Scrape down sides.

     

    Add walnut mixture and lemon zest to the TM bowl.  Mix together for 10 sec/Sp 5 until well combined.  Scape down sides.

     

    Press mixture into a lined spring-form cake tin (20cms).  Chill in the freezer for 30 mins.

     

    To make the filling, place all the ingredients in TM bowl and blend until smooth for 30 sec/Sp 6.

     

    Remove spring-form tin from the freezer and pour in the filling mixture.

     

    Chill for 1 hour in the freezer, until set.

     

    Sprinkle over some extra berries before serving.

     

    ****  Will keep in an airtight container for 1 week in the fridge or 2 weeks in the freezer.

*** I used only frozen raspberries this time. 

 

*** Used cocoa butter insread of coconut oil in the filling.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
