Ingredients

Nut Free Protein Balls

  • 70 g Lupin Flakes
  • 2 tbsp chia seeds
  • 2 tbsp Peppitas
  • 2 tbsp Flax seeds
  • 2 tbsp sunflower seeds
  • 1 tsp Vanilla powder
  • 90 g Shredded coconut, Unsweetened
  • 2 tbsp Vanilla Pea Protein Powder
  • 1 tbsp Goji Berries
  • 200 g Medjool Dates, de-seeded
  • 1 tbsp Organic coconut oil, Cold Pressed
  • 2 tbsp Organic coconut oil, Cold Pressed
  • 2 tbsp cacao nibs

Recipe's preparation

  1. 1. Place dates in a bowl and cover with warm water. Leave for 20 minutes and drain. Repeat two or three times. (This will reduce the fructose content).

    2. Pre-heat oven to 180ºC

    3. Line baking tray with baking paper.

    4. Melt 1 tablespoon of Coconut Oil and mix with Lupin Flakes.

    5. Spread Lupin mix on tray and put into the oven for 15-20 minutes or until golden.

    6. Place Chia, Peppitas, Flax, Sunflower Seeds in TM.

    7. Mill to coarse powder, 6 sec/speed 5.

    8. Add Vanilla Powder, Shredded Coconut, Protein Powder, Goji Berries and cooled Lupin Flakes.

    9. Blitz on speed 5 until combined, adding 2 tablespoons of the remaining Coconut Oil to bind. If you're adding Cacao Nibs add them here so they stay quite whole.

    10. Roll into balls coating in Coconut, Cacao. Your preference.

Tip

Because you'll be reducing the fructose content, these last better if they're kept in the freezer.

The Cacao Nibs may be a little bitter for smaller children. It's personal preference if you want to put them in. I love them.

I make mine about the size of a 10c piece.

Great for school lunch boxes.
