Ingredients
Chicken mince
- 125 grams chicken mince
- 2 spring onions
- 1 tsp fresh ginger, (peeled)
- 1 or 2 --- small chilli's
- 1 small leaf Chinese cabbage
- 1 tbsp oyster sauce
- 2 or 3 dashes sesame oil
- 1 egg
- 25 wonton wrappers (half a packet)
- pinch salt
- tamari
- Japanese Mayonnaise (Kewpie)

I'm cooking this todayRecipe's preparation
1. Place ginger, chilli, salt and spring onions in TM. Chop 5 seconds, speed 5.
2. Scrape sides of bowel.
3. Add chicken mince, oyster sauce, sesame oil and egg. (use about half of the egg). Mix 10 seconds, speed 5.
4. Add the chinese cabbage leaf to mix. Mix 5 seconds, speed 5. You want there to be texture from the cabbage.
5. Transfer mix to bowl and clean TM and return to base.
6. Add 1 litre of water to TM. Set to Varoma, 20 minutes, speed 2.
7. Layout your 25 wonton wrappers and spoon 1 teaspoon (or less) mixture in each one.
8. Wet the edges of wrappers with water or remaining egg and fold into small triangles making sure there's no air left in the cavity with the mix.
9. Stand each one upright and fold top over to close and make the dumpling shape.
10. Wipe sesame oil over varoma trays and layout gyoza.
11. Place trays on TM, up the speed to 4. Steam for 15 minutes.
12. When done, place sesame oil in frying pan and sear the bottom to brown.
13. Serve with Tamari and Kewpie for dipping. Add extra drops of sesame oil to dip to taste.

Tip
This is very much made to taste, particulary with the amounts of chilli and sesame oil.
This mix will make half the packet of wonton wrappers, but doubles very easily to make the whole packet of 50.
Wonton wrappers keep in the fridge quite well for a week if they're wrapped tightly in cling film.
