Ingredients

  • 190 grams raisins, (=1 cup)
  • 1 tablespoon raw sugar, plus one cup raw sugar (200g)
  • 1/2 cup mixed candied fruit -, ginger, cherries etc.
  • 500 grams cottage cheese
  • 300 grams sour cream
  • 1/2 teaspoon vanilla essence
  • 1/2 teaspoon almond essence

Recipe's preparation

    Raisins
  1. Cover raisins and 1 tbsp sugar with water and leave to soak for half an hour.  Then drain in colander.

  2. Chop candied fruit in Thermomix bowl - 5 seconds on speed 4.  Set aside.  No need to wash bowl.

  3. Place raw sugar in Thermomix bowl and mill for 10 secs on speed 9.


    Add cottage cheese and sour cream, vanilla and almond essences and beat together with sugar for 12 seconds on speed 6.


    Add the drained, soaked raisins and chopped fruit.


    Mix together using reverse cycle - 20 seconds at speed 3.  Mixture should be firm.


    Pile into a pyramid on the serving plate, forking it into shape, and refrigerate overnight.


    Serve garnished with walnuts, crystallised cherries, almonds etc., formed into the Chi-Rho symbols.

Tip

Paskha or Pascha (Russian: "Easter") is made in Eastern Orthodox countries of those foods which are forbidden during Lent. It is made during Holy Week and then brought to church on Great Saturday to be blessed after the Paschal Vigil. The name of the dish comes from Pascha, the Eastern Orthodox celebration of Easter.
Paskha is a traditional Easter dish made from tvorog (farmer's cheese, cottage cheese, etc.), which is white, symbolizing the purity of Christ, the Paschal Lamb, and the joy of the Resurrection.
In the Russian Orthodox tradition, pascha is usually moulded in the form of a truncated pyramid (a symbol of the Church; also said to represent the Tomb of Christ).
The pascha is decorated with traditional religious symbols, such as the "Chi Ro" motif, a three-bar cross, the letters X and B (Cyrillic letters standing for XB which is the Slavonic form of the traditional Paschal greeting: "Christ is Risen!"), eggs, and a lance, all symbolizing Christ's Passion and Resurrection.
