Ingredients

Peachy Keen Ice-cream

  • 600 grams cream, Thickened or Whipping Cream is best.
  • 120 grams evaporated milk
  • 90 grams lemon juice, fresh or bottled
  • 80-120 grams sugar, How much you use depends on how sweet your tooth is. I tend to use less.
  • 400 grams peaches, tinned is fine. If using fresh then remove skin and seed.

    Peachy Keen Ice-Cream
  1. Everytime I make this icecream, I'm transported back to lazy summer days, when I was a teenager, sitting in a hammock while the sun was warm on my face. I hope you enjoy it!

    1. Place the lemon juice and sugar in a small bowl. Stir well and let sit for a few minutes to allow most of the sugar to dissolve. It doesn'tmatter if it hasn't.

    2. Place the rest of the ingredients in your Thermomix bowl and add lemon juice/sugar mix.

    3. Blend Speed 7 for 30 seconds.

    4. Place into container in the freezer to store.

Tip

*If your finished mixture doesn't resemble whipped cream then just repeat step 3.

*If you prefer your icecream a bit chunkier, you can add some chopped pieces to the final result.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
