Place sugar into TM bowl and mill for 10 seconds on speed 10.
Add fresh pineapple, egg white and approx 350g ice.
Blend for 20 seconds on speed 9.
Add remaining ice/coconut milk/lime juice and blend a further 40 seconds on speed 10 until smooth, using the spatula if necessary.

We make this whenever we have guests over, (often spiking it with a more adult version!) and it is a huge hit! We prefer fresh, whole lime but otherwise no other changes!

Made it a second time... to bring to work instead of cake (everyone brings a cake on their own birthday but I don't usually eat cake because of the flour and sugar in them..... and who knows what else!!! :O )
I used well drained canned pineapples instead of fresh. Yielded a richer pineapple flavour. I put the pineapple in my nut bag, inside the steamer, and into a bowl to catch the extra drips. I covered it with glad wrap though so it wouldn't get too dry in the fridge.I normally use Xylitol but since some people don't like it I used organic coconut sugar, it gave the sorbet a nice caramel colour.
Made the sorbet the night before, and froze the blend in ice cubes, whizzing prior to bringing to work, and finishing off with the butterfly to whisk it and make it all nice and smooth.
I kept my thermoserver in the freezer overnight so it would be nice and cold when I put the sorbet in it (it was a hot day too so that was a good thing) and used the thermoserver tray as lid so nothing would spill over on the way to work. At work I put the proper lid on and used the tray as a tray.
I added flaked coconut as sprinkle upon serving, not even toasted, it added a very nice favour. Everyone said it was a nice change from cakes and even the pickiest person at work loved it (she had seconds!)
I bought those pre juiced lime packets - Lemon Fresh from NZ, it was cheaper than buying a bunch of limes. Made life easier too.
And since I made double the recipe to have a full thermoserver (enough for about 16+ serves) I have some leftovers and I'm sooooo looking forward to them!!!
Made it tonight with Xylitol instead of sugar, it was great! Thanks for the recipe, I think it's my new favourite sorbet!
Yum! I did reduce sugar to 70g and lime juice (used unfrozen) to 40g. this will become a regular treat at our house.
I had frozen pineapple and put that in with everything else frozen. Don't do that! It was very hard to blitz as the machine kept throwing it away from the blades. Definitely need some moisture either from fresh pineapple, or unfrozen coconut milk. I also think a little less lime would be good!
I substituted some of the lime juice and coconut milk with Malibu. It was absolutely delicious and a very classy dessert. Thank you for sharing.
I varied this recipe a bit but still got a good result! I use crushed pineapple from the tin, lime juice from a squeezy bottle (not frozen) and doubled the amount of frozen coconut milk. It turned out a bit runny probably because of my changes but was still delicious. Will definately make again.
