Ingredients
Base
- 200 grams Low Sodium Pretzels
- 250 grams Butter
Filling
- 100 grams sugar
- 300 grams cream
- 250 grams cream cheese (room temperature)
Topping
- 100 grams water
- 2 teaspoon agar agar power/gelatine
- 150 grams thawed raspberries
- 150 grams water
- 120 grams sugar
- 15 grams lemon juice

Base Method
Pre-heat oven to 200C .
Place Pretzels in mixing bowl and ground (not too fine)10 sec/speed 6. Set aside.
Place butter in bowl and melt 50C/2 mins/speed 4.
Add crushed pretzels and mix 20-30 sec/reverse/soft speed (use spatula to incorporate)
Using the MC, press mixture into the base of a pie dish that has higher sides to allow for filling and topping and bake for 10 - 15 minutes.
Cool completely.
Filling Method
Place sugar in mixing bowl 10 Sec/Speed 10, set aside.
Insert Butterfly, pour cream into bowl and whip 10 – 12 sec/speed 4 or until stiff peaks form, set aside.
Add sugar and cream cheese (gently break/crumble cream cheese into bowl) and blend 30 sec/speed 4).
Add cream, Reverse/10-15 sec/speed 1 to fold in cream.
Pour into cooled pie base, chill and allow to set while making topping.
Topping Method
Place water and gelatine into mixing bowl and mix for 20 sec/speed 2. Remove from bowl and set aside.
If using Agar Agar – blend with water in a cup and set aside.
Place remaining ingredients into mixing bowl and cook for 4min/100C/speed 2.
Add gelatin/or Agar Agar mixture and heat for 2 min/90C/speed 1.
Stain and cool slightly before pouring onto filling mixture. Chill until set.

This is a favourite recipe we picked up in the USA many years ago which I have made to be Thermomix friendly plus also making the jelly from scratch instead of using prepackaged jelly. Hope you enjoy!
