  • 150g raw almonds or cashews
  • 65g chia seeds (any colour)
  • 230g pitted dates
  • 40g cacao powder
  • 1/2 teaspoon Pure Vanilla extract or vanilla bean paste

Recipe's preparation

  1.  

    1. Line a 8 x 8 baking dish with plastic wrap and set aside

     

    2. Place nuts into clean dry bowl and turbo 2 to 3 times then set aside in another bowl

     

    3. Without cleaning bowl add chia seeds and mill on speed 10 for 15 seconds

     

    4. Add dates and chop on speed 8 for 20 seconds, scrape and repeat for 10 seconds or until a paste forms

     

    5. Add nuts, cacao and vanilla and mix on speed 5 for 15 seconds, scrape sides and repeat for 5 to 10 seconds or until all ingredients are combined.

     

    6. Place the mix into prepared baking dish and flatten until even, pressing down firmly.

     

    7. Cover and refidgerate until cold, cut into squares and store in container with lid in the fridge.

     

     

Tip

This mixture could also be rolled into little balls to make truffles.

    Hi Everyone, just made this and after reading the comments about the mixture being to dry and crumbly I added 15g coconut oil to my 1 and a half mix and it turned out perfectly. So if you think your mixture is too crumbly and dry just add to the actual recipe about 5 to 10 g coconut oil after mixing in the dates.

    Great recipe for a last minute dessert when you don’t have time to bake. I added some dried figs as I was a bit low on dates, and it was fab! Thank you!

    I added the mixture to muffin moulds and rolled some into balls for something a little different - could definitely play with the final presentation of these tasty treats. Also, you could certainly experiment with flavour-maybe adding some orange to give a jaffa taste.

    Yummy, had to add water to get it so it wasn't crumbly.  Next time I will try nice big plump juicy dates, mine were just too dry I think.

    Tasty, however mine was dry and crumbly too, I only had 30g of chia seeds left so I used sesame seeds to make up. I think my dates were too dry.

    Love this!! So delicious! I didn't have fresh dates so used sun dried ones and just did step 4 for an extra 15 seconds.
