Raw Chocolate Fudge

  • 160 grams almond pulp, leftover from making almond milk
  • 160 grams Unsalted Raw Cashews
  • 450 grams medjool dates, pits removed
  • 60 grams cacao powder
  • 40 grams desicated coconut
  • half tsp Himalayan salt

Recipe's preparation

    Raw chocolate fudge
  1. 1. Place the cashews into the Thermomix bowl and grind for 20 seconds/speed 9 or until very fine.

    2. Add pitted dates to cashew flour and process for 30 seconds on speed 10 or until well chopped and the mixture starts sticking together.

    3. Add the almond pulp and remaining ingredients and process for 20 seconds on speed 9 or until combined.

    4. Line a brownie dish or freezer type container with baking paper. Transfer mixture to container and press down firmly.

    5. Freeze for a couple of hours, slice, and eat straight from the freezer.

    This is delicious!

    i found it tricky to press into the tin because it was so sticky, but put another piece of baking paper on top and pressed down through that, which worked really well.

    I made this from the Rawtarian's site before findign this recipe. I only processed  for 5 seconds on speed 4 after adding the almond pulp etc. and it turned out nice and light and chewey. I made it another time and over processed and it was a bit claggy. I also added maple syrup but I might try leaving out next time as the dates should provide enough sweetness. 

    I dont think it will work with almond meal as it would be too dry.

    I dont see why you couldnt replace almond pulp with almond meal.

    What can I use if I don't make almond milk myself please?
