Ingredients

  • 130 g raw cashews
  • 80 g dessicated coconut
  • 100 g agave or honey
  • 130 g strawberries
  • 1 tbsp coconut oil
  • 1 vanilla bean or 2 tsp vanilla extract

Recipe's preparation

  1. Put cashews and coconut into TM bowl and mix for 40 seconds on sp8-9, scrapping down sides and repeat if necessary until it has a nut butter consistency.

    Add remaining ingredients and mix on sp7-8 for 20 seconds and scrape down sides and repeat if necessary until well combined and is a runny consistency.

    Pour into small baking or loaf tray (I line mine with baking paper) and put in the freezer for 3-4 hours to set.

    Slice and serve topped with coconut

Tip

You can try subsituting strawberries for other fruit like berries.

    This was very nice... Family loved it... I used only 70g honey, next time I will use a little less as I did find the honey flavour a little strong. Great snack tmrc_emoticons.)

    Thank you so much for the recipe.  I made my fudge wih macadamia nuts instead of cashews.  Can't wait to see if it tastes as ovely when it sets as it does in mixture form!

    Hi,

    I loved this!  I used rice malt syrup instead of honey to reduce the fructose.  A great treat, I'm going to try raspberries and cherrries next time.

    This is really yummy.  I made it exactly to the recipe but next time I would reduce the honey to 70 grams as it overtook the strawberry flavour too much.  Still good though tmrc_emoticons.)

    good to have I. Hand for sweet cravings, however I might experiment with more strawberries as it has a more cashew flavour than strawberries, still nice though  tmrc_emoticons.)

    Divine. A beautiful after dinner sweet treat. Didn't have enough sttrawberries so topped up with frozen blueberries. Deeeeelish
