Recipe's preparation

    Sago
  1. Add sago and milk to jug. Soak 1 hour. 

  2. Insert butterfly. Add sugar, vanilla and egg yolks. Cook 15 minutes 90° C Counter-clockwise operation"Counter-clockwise operation" speed 3, until sago is translucent.

  3. Transfer to Thermoserver. Clean and dry jug.

  4. Insert butterfly to clean jug. Add egg whites 37°C, 2 minutes, speed 3.5.

  5. Fold beaten egg whites into sago custard. Refrigerate.

  6. Serve cold with your favourite fruit, or fruit coulis. This one is served with a fruit, seed & nut mix.

Tip

This is converted from the recipe my mother uses.

The sago is enjoyable enough to eat on it's own.

    so delicious!! I also used 600ml milk and was still thick enough. egg whites add a nice fluffy texture but still great without.

    Very nice I put in 600ml mil & about 2tspns of vanilla essence. I went back for 2nds but my family had eaten the lot. A 2nd thermo jug helped speed the process, as it was clean & dry - ready to go for the egg whites.

    PS.Last night my egg whites woudn't whip, and the sago was just as nice without them. I doubled the sago to 200gm & 1.2litres of milk etc Also sprinkled nutmeg on top of the finished sago - yum!

    How much extra milk did everyone use please I'm having no luck with sago in my thermi, also can I do this in my tm5 and do I need to do anything different thank you

    I loved Sago as a child so have been looking for a recipe so I can enjoy it again...  This one was way too thick - but i will try it again and maybe soak the sago for longer in water first then add the milk.
