Salt Flakes Caramel Fudge
- 1 can sweetened condensed milk, (not skim) i make my own now. See tips
- 75g golden syrup
- 125g Butter
- 160g brown sugar
- 200g white chocolate, (nestle drops work for me)
- 3-4 pinches salt flakes

Chop white chocolate 5 seconds / Speed 9.
Remove chocolate and set aside, no need to clean bowl.
Now place all remaining ingredients into the TM, cook for 8mins / 100C / speed 3. With the MC REMOVED.
Scrape the sides and bottom of bowl with spatula, if necessary.
Cook for a further 20mins / Varoma Temp / Speed 3, (NO MC to ensure the condensation does not drip into the fudge).
Add chopped chocolate 10 - 15 secs / Speed 3-4, ensure choc has melted. Repeat if necessary.
Pour into lined square 20 x 20cm tin or slice tin.
Place in fridge to set for about an hour or so before cutting.
Rock Salt can be used in place of Sea Salt Flakes however they may not dissolve completely. You can add more or less salt depending on your own individual taste.
Tip
Make your own condensed milk first then just add into the bowl the butter and sugar.
Condensed milk is
125g water
110g milk powder (not skim)
225g sugar
3min 100 deg Speed 3

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

dovo: Yes I make it in molds. You have to work quickly as it sets fast. I put gold salt in the rose molds and it looks awesome.
This is the best fuidge ever. Make in Rose molds which I sprinkle with gold salt before pouring the fudge in. Looks awesome and taste stupedious!
