Ingredients
Batter
- 320 g Self Raising Flour
- 10 g cocoa
- 200 g caster sugar
- 6 fresh dates or 200g dried dates, deseeded and halved
- 2 tsp vanilla extract
- 220 g milk (or water for dairy free version)
- 2 eggs
- 150 g Butter, cubed (can use dairy free version)
Sauce
- 200 g firmly packed brown sugar
- 15 g cocoa
- 200 g Boiling water
- 2 tbsp espresso coffee powder

Preheat oven to 180deg C.
2. Coarsely chop dates.
3. Add flour, cocoa, and caster sugar - mix for 20 seconds on Speed 6.
4. Add vanilla, milk (or water), egg and butter together in a jug. Mix on speed 8 for 30-40 seconds until light and fluffy.
5. Pour into Pyrex dish. Make sure you select a dish that is large enough that the batter will only fill up halfway up the sides.
6. Make sauce: Use Thermomix (without having to wash it out) and combine the brown sugar and cocoa. Add boiling water and espresso coffee and mix on 4 at 100deg C for about 2-3 minutes until all sugar and coffee has been dissolved.
7. Pour over the batter carefully using the back of a metal spoon.
8. Bake for 40 to 45 minutes or until a skewer inserted halfway into the pudding comes out clean and sauce bubbles around the edges.
Serve with cream or vanilla ice cream.

Tip
I am always looking for non-dairy desserts and this one is perfect. I just substitute water for the milk and use non-dairy butter.

The pudding was light, fluffy and delicious, the only problem was that the sauce disappeared... I also chopped my dates for 10 seconds on speed 6 at the beginning of recipe.

Yummo.... made these in 10 individual ramekins and cooked for about 35 mintues and it worked fine. Put a scoop of vanilla icecream on top of each. Next time I would probably stretch it to 12 ramkeins as they were fairly full and had to just balance the icecream on top. Thanks for sharing you recipe.
