Ingredients
Base
- 250 grams plain biscuits, (I used Arnott's Nice)
- 150 grams Butter
Filling
- 500 grams cream cheese, (softened)
- 395 grams sweetened condensed milk
- 170 grams thickened cream
- 2.5 teaspoons gelatine
- 2 tablespoons hot water
Topping
- 225 grams strawberries, (cut tops off)
- 125 grams hot water
- 1 tablespoon caster sugar
- 1.5 teaspoon gelatine

Base
Add biscuits to TM bowl, 10 seconds, speed 6 or until finely crushed.
Place crushed biscuits aside in a seperate bowl. Melt butter in TM bowl, 2minutes, speed 2, Varoma.
Add crushed biscuits to the bowl with the melted butter and mix 1 minute, speed 1"Counter-clockwise operation"
Place biscuit mixture into a springform tin and place in freezer to set whilst making the cheesecake.
Filling
Add softened creamed cheese, condensed milk and thickened cream TM bowl, 1 minute, speed 6 or until thick and creamy.
In a small bowl combine the water and gelatine and whisk until the gelatine is dissolved.
Pour into the TM bowl and mix through the cream cheese mixture, 8 seconds, speed 4.
Using the spatula scrape down the sides and mix 4 seconds, speed 4.
Pour the cream mixture over biscuit base and back into the freezer while making the topping.
Topping
Place strawberries in the TM bowl and blitz on turbo, 3 or 4 pules until the mixture resembles a puree. You can strain your mixture through a sieve at this stage to remove seeds, I don't.
Add the sugar and mix on speed 4 for 4 seconds.
In a small bowl combine the water and gelatine and whisk until the gelatine is dissolved.
Add to the strawberry puree and mix, speed 4 for 4 seconds.
Pour over the cheesecake and refrigerate until set. I leave mine overnight. Enjoy x
The above recipe is made in a 23" springform tin.
I've doubled the recipe to fill my Versatile Rectangular Master (VRM) by Delicareware as per the picture above.

Tip
**Tip: If the topping mixture is foamy, pour it onto the cheesecake through a sieve.
