Vanilla Slice Italian
- 1litre full cream milk
- 190g white sugar
- 40g custard powder
- 80g cornflour
- 60g Butter
- 2 egg yolks
- 2 tspn vanilla essence
- 1 pkt Italian sponge fingers (or Lattice biscuits)

- Add milk, sugar, cornflour and custard powder to Thermomix and cook 10 mins 90 degrees speed 4.
Add diced butter, egg yolks and vanilla essence and mix 30 seconds speed 4. - Base
While custard is cooking prepare base by arranging sponge fingers (or Lattice Biscuits) in a 20cm x 30cm glass or ceramic dish.
Once custard is complete, pour it gently over the base.
Cover custard with cling film so it is touching. When cool decorate with strawberries, raspberries or what ever takes your fancy.

I bought the sponge fingers in Woolworths, I Savoiardi brand.
