Ingredients

Basil Pesto

  • 1 bunch basil
  • 100 gram Parmesan cheese, suit into cubes
  • 100 gram cashew nuts, toasted gives extra flavour
  • 2 garlic cloves
  • 1/2 lemon, juiced
  • 1/4 litre olive oil
  • Salt & Pepper optional

Steamed Fish

  • 4 pieces Firm white fish of choice
  • salt and pepper to taste

Rice

  • 2 Cups Rice Bubbles, rinsed

Recipe's preparation

    Basil Pesto
  1. Place garlic, nuts and cheese in TM bowl, 5-10 secs on sp 8

    Add basil and lemon juice in TM bowl, 5 secs sp 5.

    While processing add oil and salt and pepper if desired.

     

    (can be used as a dip of crust for lamb or chicken)

  2. Steamed Fish
  3. Lay Fish in varoma - using both layers if necessary

    Make sure you leave some of the holes open to allow steam to escape
    Top generously with basil pesto
    (I like to add a little olie oil to varoma before placing fish)

    Cook for 12-20mins on Varoma temp

    If you aren't making the rice at the same time add 1L of boiling water to the TM bowl
    Cook for 12-20mins * time will depend on how thick you fish is - best to check after 10mins and add time accordingly 

    If you are making rice at the same time go to next step

  4. Rice
  5. Add 2 cups of rice to the basket 
    (I like to rinse rice before adding into the TM bowl)

    Add 1l boiling water (if you are using brown rice add 1.25l water)
    Salt & pepper to taste

    Place on lid with MC on Sp4 at Varoma temp 

    White rice will take about 20mins
    Brown rice will table about 40mins
    Wild rice or a combination of the above check after 25mins 

    If cooking fish with the rice - cook the rice and 15 mins before end of cooking time add the varoma ontop with fish - if you don't want fish juices on rice first complete cooking rice and add it to your thermoserver then proceed to cook fish

    Very delicious. Made with rice in basket & broccoli in top of veroma. Used salmon portions & added pine nuts to sauce. Set for 20 mins & all was perfect!

    Pesto was tasty but I wouldn't add so much oil next time.
