Place salmon pieces in a single layer in a oven proof casserole dish. Pour over buttermilk and marinate in fridge for 4 hours or overnight.
Place stale (or fresh) bread in thermomix with lemon pepper and butter. Mix speed 6 for 10 seconds until an even crumb is achieved.

Recipe is created for
TM 5
If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Do you cook in the buttermilk ? or drain it off

Delicious and so simple!
Used leftover sourdough bread, the lemon pepper, butter and added a tsp fennel seeds. I chose to drain off the buttermilk and baked uncovered for about 15-20 mins.
Buttermilk soak seemed to reduce the fish oil taste that baked salmon sometimes has.....
Definitely into my faves and will try with Asian flavours too. Thank you! 😊

Very tasty and simple. Great family recipe that is quick, easy and healthy. Just how I like it! I cooked initially with lid on, then took off and was ready when the breadcrumbs were just going golden.
Hi This recipe sounds delicious. Just one query, "bake at 180 deg" for "how long?"

What an easy way to prepare salmon! I tried it tonight and loved it. Wasn't sure if lemon pepper being the only spice, no extra salt, would be enough but it was delicate and tastefull.
sorry, forgot the rating
