Recipe's preparation

    For the bread
  1. As per the EDC, or the TM5 Basic focaccia recipe, using 50g less water. The dough needs to be firm enough to roll out. 

    Place water, yeast and sugar into mixing bowl and heat 1min/37/speed 1.

    Add flour, oil and salt and mix 20 sec/speed 6, then knead 2 min.

    Transfer to greased bowl or thermomat and leave to rise for 30 mins. 

    Divide dough into four pieces. Roll each one out to the size of a dinner plate approx. Spread with desired fillings (see tips) and stack each dough piece leaving the last one unspread.

    Place a glass gently on the centre and using a blunt knife make sixteen cuts out from the glass to the edge of the dough. 

    Now take two segments and turn them upside down away from each other. Turn them away from each other again and then press ends together. 

    Continue around the circle until all the peices of dough have been processed in this manner.  You should have eight segments.

    Brush with egg white, and leave to rise for at least 1 hour.

    Cook in a hot oven (200 degrees) for 25-30 minutes. Eat while still warm

Tip

Sweet filling suggestions: brown sugar/cinnamon and apple mixed 4sec speed 5./thermomix chocolate hazelnut spread/date spread - see my other recipe.

Savoury filling suggestions: sundried tomatoes mixed with spinach and ricotta/saute onions and mixed herbs/marmite and cheese spread.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
