Ingredients

Crab Pancakes

  • 4 blue swimmer crabs, Crabs should be cleaned and cooked with meat removed
  • 1 heaped tablespoon choice of your herbs, I used basil
  • 1 chilli, optional
  • 2 eggs
  • 400 grams Lite milk
  • 300 grams Self Raising Flour
  • 1 pinch salt
  • 1 shallot, cut into chunks
  • 4 scoops sour cream
  • 1 bunch chives
  • 1 lemon

Recipe's preparation

    Crab Pancakes
  1. Crab needs to be cooked and meat removed.

  2. Place fresh herbs, i used basil into your bowl with chilli and shallots. Closed lid"Closed lid" 5 seconds on speed 6

  3. Scrap down sides. Place flour, eggs, milk and salt into bowl Closed lid"Closed lid" 10 seconds on speed 4

  4. Scrap down sides and add butterfly and crab meat. Closed lid"Closed lid" 15 seconds on speed 2

  5. Remove butterfly and scrape mixture into a bowl. Put oil/ butter into fry pan on medium heat. Pour scoop into fry pan and cook until firm and bubbled then flip and cook on other side. I used a mini pancake cooker to make small pancake balls.

  6. Serve on plate with scoop of sour cream, lemo wedge's and chives to garnish. You could also serve with sweet chilli sauce or Ketchup Manus.
