Ingredients

Salmon

  • 600 grams fresh Atlantic salmon fillets
  • sea salt and ground pepper
  • 400 grams Jasmine rice
  • lime wedges, to serve

Nam Jim

  • 1 bunch coriander roots
  • 1 long red chilli, deseeded
  • 2 cloves garlic
  • 50 grams palm sugar
  • 50 grams lime juice
  • 2 tablespoons fish sauce

Recipe's preparation

    Salmon and Nam Jim
  1. 1. To make nam jim dressing, place coriander roots, chilli and garlic into bowl and chop 5 seconds Speed 6. Scrape down sides of bowl. Add remaining ingredients and combine 20 seconds Speed 6. Set aside.

    2. Without washing bowl, add 900 g water.

    3. Place 400g jasmine rice into simmering basket. Rinse until water runs clear and place into bowl. 

    4. Place salmon fillets into Varoma dish and/or tray. Place on top of bowl.

    5. Cook rice and salmon 16 minutes, Varoma Speed 4.

    6. Serve together with nam jim dressing and steamed Asian greens, such as bok choi. Place these in Varoma for final five minutes of steaming time.

    NB: If you prefer your salmon less well cooked, begin steaming rice and add salmon fillets after a few minutes.
