Ingredients
Seafood Marinara Risotto
- 10 g Parsley leaves
- 2 small onions peeled and halved
- 1 garlic clove
- 1 tbsp extra virgin olive oil
- 210 g arborio rice
- 1 pinch saffron, ground
- 90 g dry white wine, eg pinot grigio
- 135 g tomato passata, or marinara sauce
- 1 heaped tablespoon Veg Stock Paste (EDC)
- 750 g water
- 1 tsp lemon zest, grated
- 1 tablespoons chopped parsley, reserved from step 1
- 450 g Seafood marinara mix, or green prawns (peeled weight)

Add Parsley and chop for 10 seconds on speed 6. Take out half and set aside
Add Onions and Garlic to the TM Bowl and chop for 5 seconds | Speed 6. Scrape down the sides of the bowl
Add the Oil and saute for 3 Minutes | 100 Degrees | Speed 1
Insert butterfly. Add Rice, Saffron and Wine and saute for 2 minutes | 100 degrees | "Counter-clockwise operation" | speed 1. Leave the MC OFF
Add Passata and saute for 1 minute | 100 degrees | "Counter-clockwise operation" | speed 1. Leave the MC OFF
Add Stock Paste and Water and cook for 14 minutes | 100 degrees | "Counter-clockwise operation" | speed 1. Use the Simmer Basket on top instead of the MC
Add Lemon, reserved Parsley and Seafood, and cook for 2 minutes | 100 degrees | "Counter-clockwise operation" | Speed 1
Place in thermoserver and let stand for approx 10 minutes
Season with salt and pepper and garnish with parsley sprig

Tip
can use the 'marinara sauce' and 'seafood' from the John West Marinara Kit 370g (discard the seasoning mix) and top up with 250g of 'frozen green prawns' (450g total seafood, peeled weight)

Delicious recipe. Put half the seafood in and seared the other half in a pan to put on top when serving. Forgot to put the butterfly in and it was still perfect consistency. Added chilli flakes, a big sqeeze of lemon and parmesan. Thanks for the recipe!
Made this for dinner tonight it was delicious I added 1/4 of teaspoon of chilli flakes, baby spinach and Parmesan cheese and used a marinara mix and followed the recipe exactly I will be adding to my repertoire thank you
Cook for 23 minutes instead of 14 minutes. Then add seafood and stand for 10 minutes. Add Parmesan cheese to serve
I accidentally put Jasmin rice in the bowl and it worked just as well. I added parmesan cheese on dishing up and I loved it.

I've just made this one for the second time....... Perfection! the seafood is actually cooked to perfection! I added a teaspoon of chili flakes
Great consistency for a risotto and both kids devoured it so a great success for me. Just needs a tweak to add more flavour, a chilli perhaps.
