Ingredients

Fresh Basil Mayonnaise

  • 250 g Grapeseed Oil
  • 1 egg, room temperature
  • 1 teaspoon Lemon juice or vinegar
  • 2 teaspoons Dijon mustard, room temperature
  • 2 pinches ground black pepper
  • 1/2 teaspoon Sea salt, Ground
  • 15 g fresh basil leaves torn

Salmon Salad

  • 250 g cherry tomatoes
  • 2 cloves garlic
  • 4 x 180 g Salmon Fillets, skin off
  • 300 g Green beans, trimmed
  • 1 bunch Asparagus, trimmed
  • 300 g Baby potatoes, halved

Recipe's preparation

    Fresh Basil Mayonnaise
  1. This is a variation of the EDC Mayonnaise

    Add basil leaves to mixing bowl and chop 5 sec/speed 7

    Place a jug onto mixing bowl, weigh oil into jug and set aside

    Add egg, lemon juice, mustard, pepper and salt into mixing bowl. Mix 1 min 30 sec/speed 4 while very slowly pouring reserved oil around measuring cup, letting it drizzle into the mixing bowl to emulsify. Transfer to a bowl and set aside.

  3. Place garlic cloves in mixing bowl and chop 3 sec/speed 5

    Stir chopped garlic through cherry tomatoes and set aside

    Rinse mixing bowl and add 500 g water

    Insert simmer basket and add potatoes

    Place salmon onto top Varoma tray and season with salt and pepper if desired. Insert Varoma tray and place Varoma into position. Steam 15 min/Varoma/speed 1

    Place beans, asparagus and tomatoes into Varoma dish and steam 5-7 min/Varoma/speed 1

    Ensure salmon is cooked through and set aside to rest for 5 min

    Divide beans, asparagus, potatoes and tomatoes between four serving plates. Break salmon into pieces and place on top. Drizzle basil mayonnaise over the top or serve on the side

Tip

Ensure all the mayonnaise ingredients and your mixing bowl are at room temperature for best results

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
