Ingredients
Vietnamese Steam fish with ginger and garlic
Sauces
- 60 g oyster sauce
- 30 g soy sauce
- 10 g sugar
- 30 g water
- 3 cloves garlic, peeled
- 10 g fresh ginger, peeled and cut into thin sliced
- 15 g eschalots, peeled
- 20 g cooking oil
Steamed fish and garnishes
- 1000 g whole fish, gutted, cleaned, Best for Barramundi or silver perch
- 4 sprigs spring onion, trimmed and cut into half
- 10 g fresh ginger, peeled and cut into thin sliced
- 500 g water, for steaming

- Place garlic, ginger, eschalots and oil into mixing bowl.
Turbo 2s, once.
Then cook for 2mins/Varoma/Speed 2
Place oyster sauce, soy sauce, sugar and water into the mixing bowl.
Continue to cook for 3mins/ Varoma/Speed 2. - Place fish into a kidney dish. Place ginger and 4 spring of spring onions into the fish belly and on top of fish. Place the kidney dish onto varoma dish.
When the sauce is done, pour sauces over the prepared fish.
Do not wash the mixing bowl.
Pour 500g of water into the mixing bowl.
Place covered Varoma into position and cook 20 mins-30mins/Varoma/Speed 2.
Remove Varoma.
Place some fresh parsley and spring onion on top. Sprinkle with pepper. Serve hot with steam rice.

To save time, while your sauce is cooking, proceed with the recipe and prepare your fish and garnishes.
We recommend using the freshest fish possible in this recipe. You can also ask your fish monger to gut and clean your fish for you.
Can swap sugar by honey for a no sugar recipe.
You may need an additional 5-10 mins of steaming time until fish is cooked to your liking.
