Marinade
- 3 teaspoons ground cumin
- 3 teaspoons Ground Coriander
- 2 teaspoons turmeric
- 2 tablespoons sweet paprika
- 0.5 teaspoons chilli powder
- 2 teaspoons cinnamon
- 0.5 teaspoons ground cardamom
- 2 cloves garlic
- 10 grams ginger, sliced into coins
- 150 grams plain, unsweetened yoghurt
- 1.5 tablespoons lemon juice
- 700 grams chicken breast or thigh, cut into cubes
Butter chicken sauce
- 2 cloves garlic
- 10 grams ginger, sliced into coins
- 1 large onion (+/-200g)
- 70 grams Butter
- 2 teaspoon turmeric
- 3 teaspoon garam marsala
- 1 tablespoon ground fenugreek
- 2 teaspoons salt
- 680-700 grams passata (large bottle)
- 100 grams tomato paste
- 400 grams cream
- 50 grams honey
- 50 grams raw sugar

- Add all spices, garlic and ginger to mixing bowl and blend 4 sec/speed 9/MC on. Scrape bowl down and repeat 2 more times.
Add yoghurt, lemon juice and chicken and blend 15 sec/speed 1/reverse"Counter-clockwise operation" /MC on"Counter-clockwise operation"
Transfer into a separate bowl and cover. Leave to marinate overnight or for at least 4 hours. - Chop garlic, ginger and onion on turbo/1 second/MC on. Scrape bowl down and chop again turbo/1 second.
Scrape bowl down and add 50 grams of the butter.
Cook 7 mins/100 deg/speed 1.5/reverse/MC off
Add turmeric, garam marsala, fenugreek, salt, and remaining 20 grams of butter and cook 4 min/100 deg/speed 1.5/reverse/MC on
Add marinated chicken, passata, and tomato paste.
Cook 12 mins/100 deg/soft speed/reverse/MC on
Add cream, honey and raw sugar - 5 mins/90 deg/soft speed - stir with spatula occasionally.
Transfer to Thermoserver to allow flavours to develop before serving.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
