Ingredients
Curry Sauce
- 40 g almonds or cashew nuts
- 1-2 Brown Onions, halved, (depending on size)
- 3-4 cloves garlic
- 2 cm piece Ginger, peeled
- 80 g Butter
- 400g can crushed tomatoes
- 80 g tomato paste
- 3 tsp paprika
- 2 tsp coriander
- 4 cardamon pods, bruised
- 1/4 tsp chilli pwd, (add more if you like it hotter)
- 1 tsp Fenugreek seeds
- 1 cinnamon stick
- 2 tsp garam masala
- 1 tsp salt
- 30 g apple cider vinegar
- 160 g Natural greek yoghurt
- 2 tsp chicken stock paste
- 5 g palm sugar
- 1 kg chicken breast, cut into pieces
- 120 g cream

Place nuts of choice into bowl and blitz on sp 9 for 10 seconds.
Place aside.
Without rinsing bowl add onions, garlic and ginger and blitz on sp 7 for 3 seconds. Scrape down sides of bowl.
Add butter and saute 3 minutes, 100C, MC off.
Add all remaining ingredients, including reserved crushed nuts, EXCEPT cream, and cook for 15 minutes, 100C Sp 1.
Add cream and cook for a further 3 minutes, 100C, sp 1.
Tip
This curry is a mixture of several different curries that I have tried, in an attempt to find a butter chicken curry that is quick and easy, and enjoyed by the whole family. I hope you like it as much as we do!
I cook this curry with the blades rotating forwards, because I like it if the chicken starts to shred. If you don't want this to happen, then cook the curry on Reverse.
When serving, you might like to sprinkle with some extra roasted cashew nuts and fresh coriander. We serve it with brown rice and roti...there is lots of sauce for dipping roti into!

Absolutely delicious, however my chicken was rather dry, might have cut it too small. Will try again another night but add the chicken a few minutes later

Yum, Easy, Tasty & Quick.
My husband & l had this for dinner tonight. The only change was chicken stock powder & dried fenugreek as l didn't have fenugreek seeds. Served with jasmine rice & Naan bread. Thankyou for your delicious thermomix recipe.
Not my favourite butter chicken, but certainly quick and easy
Vegetarian Alternative I omitted the chicken, added chopped mushroom and zucchini with the onion and cooked on reverse. I added steamed potato and pumpkin for the last cook. I used vegetable stock paste and fresh tomatoes instead of the tin.This will be my go to curry recipe now, loved it! Served with home made naan and mango chutney, followed by a mango lassie, yummo!!

This is a great quicker butter chicken, I have made it several times and added a few extra herbs that are in the 'skinnymixer' bc recipe, star anise etc, and it is great. Really yummy & feeds a crowd
