Ingredients
Chicken Creamy Lemon Spinach TASTY QUICK
- 40 g Parmesan cheese, grated
- 50 g Salted butter, any butter is fine
- 2 heaped teaspoons garlic paste, or 2-4 cloves garlic chopped
- 1kg --- skinless chicken thigh fillets, diced
- 1 tsp fresh thyme, leaves
- 40 g lemon juice
- 1.5 tbsp sweet paprika
- 1 pods chicken stock paste, continental stock concentrate is a handy one to have on hand
- 150 g thickened cream, any cream
- 80 g Fresh Baby Spinach, I use 120g as I love spinach and it shrinks

- 1. Grate Parmesan (if not already), place block and chop on speed 8 for 10 seconds (or until fine)
Place to the side
2. add butter and melt for 1min / speed 2 / 100°C
3. Add Garlic and sautee for 1 min / speed 1 / 100°C
4. Add chicken and paprika and seer for 4min "Counter-clockwise operation" / speed 1 / 100°C
5. Add remaining ingredients and cook for 7mins / "Counter-clockwise operation" / speed 1 / Varoma °C
(place spinach in last so you can shove it down as it heats with spoon)
6. serve with rice, zuchini noodles, naan bread, add capsicum, zucchini or any other preferred vegatables
Quick Sauce
Tip
I use 120gm baby spinach, I just add it in two halves in the last cooking stage as it shrinks down

van der Ploeg: Hey there, yes we love it with Chilli! Gives it that extra bit of flavour, cant remove the MC to help some liquid evaporate but my husband likes it liquidy so thats how i make it Thanks for sharing
I thought this recipe had really nice flavours but it needed a little more zing of “something”. There was also far too much liquid. I added a huge spoonful of cornflour after the stated cooking time and cooked the dish for another 5 minutes. This helped a little. With a few tweaks, this recipe could be really great. Thanks for sharing.
