Ingredients

CREAMY (SWEET POTATO SECRET) RISOTTO spinach mushrooms parmesan

  • 100 g Parmesan cheese
  • 1 portions brown onion, small/med or half a large
  • 40 g Salted butter, or olive oil
  • 2 tsp garlic cloves, or crushed etc
  • 200 g sweet potato, after you have peeled it
  • 150 g fresh mushrooms

second stage

  • 100 g white wine
  • 300 g rice, risotto
  • 400 g skinless chicken thighs, 300-500g breast, diced
  • 1 tbsp chicken stock, concentrate
  • 2 tbsp kecap manis, SOYSAUCE works fine too
  • 150 g Fresh Baby Spinach, 150-300g can use extra as it shrinks

Recipe's preparation

    chopping and disguising
  1. MC cup in for all steps
    if parmesan is a block, put in thermo and chop, speed 7-9 until quietens, put aside (in server or to sprinkle at end)
  2. add onion halved, garlic, sweet potato (roughly chopped 2cm), mushrooms (if you want to disguide them)
    Chop speed7-9 until quiet (may need to scrape and chop again if sweet potato still chunky)
  3. insert butterfly
    add butter/oil, 100°C, speed 1, 3mins.
  4. add wine, rice and chicken stock, 100°C, speed 2, 3mins Counter-clockwise operation"Counter-clockwise operation"
  5. add chicken, kecap manis/soy, baby spinach, 100°C, speed 2, 20mins Counter-clockwise operation"Counter-clockwise operation"
  6. whilst its cooking, boil water, add until water is same height as mixture
  7. place in thermo server, sprinkle with parmesan and fold through, allow to stand for 5-10 mins
    Season with pepper

Tip

if you (or the kids!) dont like spinach, add that with the onion in step two

this recipe has a beautiful balance of sweet and creamy from the sweet potato, if your family are happy with chunks leave them chunky! otherwise its a nice way to hide the goodness but keep the flavour
