Ingredients
Chicken and Veggie Patties
- 500 g chicken mince
- 1 handfuls of spinach
- 2-3 spring onions
- 2 sprigs parsley or coriander
- 1-2 carrots
- 1 egg
- 1 tbsp chicken stock paste
- 100-150 g feta cheese
- 2 tbsp psyllium husks
- 2 pinches black pepper, freshly ground
- Olive oil or coconut oil

- Roughly chop spring onion and carrot into chunks and add to bowl with spinach and parsley/coriander. Chop 5 seconds, speed 6.
Add chicken mince, egg, psyllium husks, chicken stock and black pepper to bowl and mix speed 5 until combined.
Add feta and mix on reverse, speed 2 for 10 seconds. If not totally mixed through then just use your spatula so the feta remains in chunks.
Add enough oil to cover the bottom of a frypan and heat on medium-high heat.
Shape a tablespoon full of mixture into a ball, using 2 spoons and place into the pan and press down with the back of a spoon to make a flatter ‘pattie shape’. (I cook 5-6 patties at a time so they fry and don’t boil). Turn patties with a spatula when golden on the underside.
Ensure that they are cooked through before removing from pan and place into a Thermoserver and continue to fry in batches until all your mixture is used. You may want to turn down the heat to ensure they don’t burn.
Serve with home made potato or sweet potato, cut into chips or wedges and a salad.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
