Ingredients

  • 2cups seasonal vegetables
  • 1 tablespoon fresh ginger, finely chopped
  • 2 tablespoons soy sauce
  • 1 teaspoon vegetable oil
  • 1 tablespoon mirin or chinese wine
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 2 teaspoons white sugar
  • juice and zest of 1 lemon
  • 1 large chicken breast, sliced
  • 1 tablespoon toasted sesame seeds, to garnish
  • 2 green shallots, finely sliced

Recipe's preparation

  1. Method:

    1. Place the vegetables evenly into the base of the varoma, place the lid on top and set aside.
    2. Put the ginger, soy sauce, vegetable oil, mirin, oyster sauce, sesame oil, sugar, lemon juice and zest into the TM bowl at cook for 2 minutes/varoma/speed 1.
    3. Add the sliced chicken breast to TM bowl. Secure the varoma on top and cook for 6 minutes/varoma/reverse/Speed 1.
    4. Transfer to a serving plate and garnish with sesame seeds and sliced shallots. Serve with steamed jasmine rice.

    It's a no from me I'm afraid. Nice flavour however nothing to thicken the sauce. The chicken shredded to tuna consistency, and i was definitely on reverse speed. My vegetables didn't cook (fresh carrot, and Boc Choi). Assuming the broccoli did as it was frozen. I ended up tipping the vegetables in the wok to cook, then tipping the chicken and liquid into the wok with some thickener to thicken it up. I would like to perfect this recipe for the Thermomix as I love lemon. Perhaps

    the vegetables need to be steamed first and then put in the Thermomix with some corn flour.

    I really enjoy this dish, i prefer to leave the lemon out if the kids are eating it, as it is a bit zingy

    I doubled this recipe. I used fresh ginger but not as much as what the recipe states. I also added 2 cloves garlic (remembering I have doubled this). I also used chicken breast - cut into larger sized pieces but found that it was shredded towards the end of the cooking time. I also didnt use as much lemon as the recipe states. Overall, the family loved dinner - 2 year old & 8.5 year old! The partner enjoyed it & my mum also swore she was eating a Thai dish! Will cook this again!!
