Marinade
- 4 sprigs parsley
- 4 sprigs mint
- 2 sprigs coriander
- 2 tablespoon honey
- 60 g orange juice
- 3 tablespoon soy sauce
- 3 tablespoon Grapeseed Oil, or similar
- 2 tablespoon white wine vinegar
- 2 tsp fine salt
- 3cm cube fresh ginger
- 2 tablespoon marsala wine, or sweet wine
- 1 tablespoon Masala or other sweet wine, add to the Jus when cooking
- 20 g Butter, add to the Jus when cooking
- 1000 g cold water, for steaming chicken in Varoma

- 1 fresh chicken organically happy, Whole or Pieces

- Butterfly the chicken by cutting along the backbone with kitchen scissors or a knife, flatten.
- Place all marinade ingredients into TM bowl and mix 6 sec on speed six
- Put chicken and marinade into a large ziplock bag and seal
Massage Marinade well into the chicken - leave for 2 hours in the fridge or overnight if possible - Cook chicken - place Chicken into Varoma dish.
Put 1000g cold water into TM bowl, replace TM lid and place Varoma dish and lid into position on top.
Cook for 40-60 mins temp varoma, speed 2 and finish off under the grill or BBQ for colour. Chicken cooked when juices run clear when knife inserted into thickest part of the leg. - While steaming chicken place marinade into 250gms juices from the bowl, a splash more masala or wine and 20gms butter and cook to reduce Jus 15 mins, temp varoma, speed 2. At this time veges can be cooked above in the varoma.
Serve with Jus and enjoy! This is a tender and suculent chicken that cooks quickly and is easy to prepare.
