Ingredients

Hunker Begendi 

  • 120 g Cheddar cheese, cut into 2-3 cm pieces
  • 500 g Beef, cut into 3 cm pieces
  • 250 g tomatoes, cut in half
  • 100 g onion, cut in half
  • 2-3 pieces garlic cloves
  • 30 g olive oil
  • 30 g Butter
  • 2 teaspoons salt
  • 2 teaspoons pepper, ground
  • 100 g water
  • 500 g eggplant, peeled & sliced

Bechamel Sauce

  • 150 g Milk
  • 30 g Butter
  • 30 g Flour, Plain

Recipe's preparation

  1. Add cheese to the Closed lid"Closed lid" bowl and grate 15 sec / speed 5. Remove & set aside

  2. Add onion & garlic to the Closed lid"Closed lid" and chop 3 sec / speed 5. Add olive oil and butter and cook for 5 mins / 120 °C / speed 1.

  3. Add diced meat, tomatoes, salt, pepper, pepper paste & water to the Closed lid"Closed lid" .

  4. Place the eggplant into the varoma tray & place on top of the Closed lid"Closed lid" . Cook for 50 mins / VAROMA / Gentle stir setting"Gentle stir setting" . (if the meat is too runny cook for a further 5-10 mins).

  5. Remove meat from Closed lid"Closed lid" and place in a thermoserver. Clean & dry the Closed lid"Closed lid" .

  6. Bechamel Sauce
  7. Place all sauce ingredients into Closed lid"Closed lid" & cook for 5 mins / 100°C / speed 2.

  8. Add reserved cheese & eggplant and blend 7 sec / speed 2 Counter-clockwise operation"Counter-clockwise operation" .

  9. To serve pour the bechamel mixture onto a wide plate or bowl & top with meat mixture over the middle. Enjoy!

Tip

Pepper paste can be purchased from middle eastern stores.
