- 5 cloves garlic, Peeled
- 5 piece candlenuts
- 40 g tumeric, Fresh, sliced into coins
- 15 g ginger, Fresh, sliced into coins
- 40 g vegetable oil
Shrimp Paste
- 15 g shrimp paste, roasted
- 5 g vegetable oil
Sauce
- 2 piece lemongrass, Bruised
- 25 g galangal, Fresh, Cut into coins
- 2 can coconut milk, 800ml total
- 700 g chicken thigh, Cubed
- 500 g potato, Peeled, Quartered
Spices
- 2 teaspoon ground cumin
- 2 teaspoon Ground Corrianer
- 1 teaspoon ground fennel
- 1 teaspoon ground nutmeg
- 5 piece cloves
- 1 tablespoon salt
- 75 g sugar

Add all Curry Paste Ingredients to "Closed lid"
Blitz 15 Sec, Sp 8, MC On
Scrap down sides of "Closed lid"
Cook 4 Min, 100'c, "Gentle stir setting" "Counter-clockwise operation"
Add Shrimp Paste to the"Closed lid"
Grind 10 Sec, Sp 7, MC On
Scrap sides of bowl down
Add 5g Oil
Cook 85'c, 4 Min, Sp 1.5, MC On
Add Lemongrass, Galangal and Coconut Milk and all Spice ingredients to "Closed lid"
Cook 12 Min, 100'c, "Gentle stir setting" "Counter-clockwise operation" , MC On
Add Chicken and Potatoes to "Closed lid" and cook for a further 40 Mins, 100'c, "Gentle stir setting" "Counter-clockwise operation" MC On
Serve with Rice and topped with fried shallots
Replace Chicken with same qty of Sweet Potato.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Beautiful curry. Just like in Bali. I reduced the chillis as had really hot ones. All the family loved it.
