Ingredients

Meatloaf

  • 1 Carrot - peeled and chopped into chunks
  • 1 Zucchini - chopped into chunks1
  • 1 Celery stick - cut into chunks
  • 2 Large onions - quartered
  • 2 cloves of garlic, peeled
  • 1 --- egg
  • 1 Cup breadcrumbs
  • 1 tablespoon Dijon mustard
  • 1 tablespoon curry powder
  • 1/4 Cup choped parsley leaves
  • 500 grams pork mince
  • 500 grams Beef mince

BBQ Sauce

  • 60 grams Butter
  • 120 grams tomato sauce/ketchup
  • 80 grams water
  • 60 grams raw sugar/brown sugar
  • 3 tbsp Worcestershire sauce
  • 2 tbsp instant coffee
  • 1 tbsp Dijon mustard
  • 1/2 lemon - juice only

Add to above 2tbsp vinegar

Recipe's preparation

    Prepare Meatloaf
  1. Preheat oven to 180 degrees and grease 2 loaf tins

  2. Place carrot, zucchini and celery in TM bowl and blitz on speed 7 for 5 seconds. Scrape down sides of bowl with spatula.  Add oil and sauté on reverse speed 1, 100 degrees, 5 minutes.  Remove and set aside in a bowl. 

  3. Place onion in TM bowl and chop on speed 5 for 4 seconds.  Scrape down sides of bowl with spatula.  Add oil and sauté on reverse speed 1, 100 degrees, 5 minutes. 

  4. Add back Veges and all remaining ingredients, (no meat yet) mix on  speed 2 for 1 min.  Add in beef and pork and mix on speed 2, 30 seconds.  Use your spatular to help Combine and repeat mix on speed 2, 30 seconds as many times as needed. Scrape and blend with spatula in between.

  5. Press your meatloaf mix into the greeced loaf tins and cook in the oven for 30 mins at 180 degrees.

  6. BBQ Sauce
  7. Place all the BBQ sauce ingredients in the TM bowl and mix on speed 4 for 30 seconds.

  8. Heat the sauce for 5 mins on speed 1 at varoma temperature.

  9. Cooking the sauce until sticky
  10. Once your meatloaf has cooked for 30 mins (it will have slightly shrunk), drain excess fat off the loaf.  Then drizzle the sauce all over the top.

  11. Place meatloaf back into the oven for another 45 mins.

  12. Once cooked allow to cook slightly for 5 mins before serving.  Slice in the tin 2cm slices.

     

  13.  Serve with Mash in winter of salad in summer  

     

    This dish can be served hot or cold, also can be frozen and reheated.

Tip

Left overs are lovely sliced into sandwiches with a little BBQ sauce spread over the top.

    Absolutely loved the flavour of this recipe, the meatloaf was so juicy and full of flavour, have had to play around with the measurements due to it going a bit too mushy for our liking and less like an actual loaf, but otherwise it was just perfect

    So yummy. I agree with others that the recipe isn't writen very well, e.g. oil quantity missing, garlic in ingredients but not in method... but I'll forgive all that cos it was very yummy and fairly easy to figure out what to do.

    Yummo! This is a delicious and moist meatloaf recipe. I omitted the egg as my sons allergic and it still worked out fine. Will definitely make again thanks

    Just divine! Recipe wasn't altogether clear. Didn't say how much oil, and I added the garlic with the onion. When it's time to add the meat, I do it by hand in a bowl as it doesn't mix well in the thermie. I also cooked the sauce for 10 mins with the mc off as suggested. So moist and tasty!
