Ingredients
2 lbs ground beef, 85% or 90% lean or ground meat of your choice
1 med onion, quartered
2 large eggs or 2 flax eggs
3 garlic cloves
3 Tbsp ketchup
3 stems of fresh parsley
3/4 cup Panko breadcrumbs or gluten free breadcrumbs or gluten free panko
1/3 cup milk, buttermilk or broth of your choice
1 ½ tsp salt, or to taste
1 ½ tsp Italian seasoning
1 tsp ground black pepper
1 tsp ground smoked paprika
*****FOR THE SAUCE*****
1 & 1/2 cup ketchup
3 tsp white vinegar
5 Tbsp brown sugar
2 tsp garlic powder
1 tsp onion powder
1 tsp ground smoked black pepper
1/2 tsp salt

- Line a 9”x5” loaf pan with parchment paper and preheat oven to 375°F.
- Add to thermomix bowl... 1 med onion, quartered 3 garlic cloves 3 stems of fresh parsley 5 sec/speed 10 then add 2 lbs ground beef, 85% or 90% lean or ground meat of your choice 2 large eggs or 2 flax eggs 3 Tbsp ketchup 3/4 cup Panko breadcrumbs 1/3 cup milk, buttermilk or broth of your choice 1 ½ tsp salt, or to taste 1 ½ tsp Italian seasoning 1 tsp ground black pepper 1 tsp ground smoked paprika then mix 30 sec "Counter-clockwise operation" speed 7
- Add meat to the loaf pan, gently press meat down and shape evenly and bake meatloaf at 375˚F for 40 minutes.
- In a small bowl, mix all of the ingredients together for the sauce. Spread the sauce over meatloaf then return to oven and bake additional 15-20 minutes or until the internal temperature is 160˚F. Rest meatloaf 10 minutes before slicing.

To make gluten free:
use gluten free breadcrumbs or gluten free panko
To make meatloaf vegetarian or vegan use:
plant based ground meat alternative as replacement for ground beef
vegetable broth or unsweetened plant based milk in place of buttermilk
flax egg or vegan egg alternative in place of egg
To make sauce vegan:
Replace ketchup in sauce with a sugar free ketchup
Replace brown sugar in sauce with agave or other plant based sugar alternative
