Ingredients
Mash
- 400 g potatoes, cut into 2-3 cm pieces
- 125 g Milk
- 15 g Butter
- 1/2 tsp salt
- 1 pinch nutmeg, ground
Pork
- 300 g pork tenderloin, sliced into 1cm thick rounds
- Salt and pepper, to taste
Sauce
- 300 g white wine
- 1 tbsp redcurrant jelly
- 70 g cream
- 10 prunes, pitted
- snow pea sprouts or watercress, to serve

Soak prunes in wine while preparing the mash and pork.
Insert butterfly whisk. Place potatoes, milk and salt in TM bowl, and put TM lid on. Flatten pork slices with your hand and arrange in Varoma tray. Assemble Varoma and place on top of TM lid. Cook for 30 mins / 95 degrees / speed 1. Without removing Varoma lid, put entire Varoma on top of a Thermoserver to keep warm while preparing mash.
Add butter and nutmeg to TM bowl. Mash potatoes for 30 secs / speed 3.
Place mashed potatoes in Thermoserver under Varoma to keep warm while preparing the sauce. Rinse out TM bowl.
Drain the wine from the prunes into the TM bowl, and set prunes aside. Heat wine for 5 mins / 100 degrees / speed 1.
Add redcurrant jelly and cream to TM bowl, and mix for 1 min / speed 2.
Return meat and prunes to TM bowl. Heat for 5 mins / 100 degrees / speed 2 on reverse, MC off.
Place mash on plate and arrange pork slices on top, before pouring sauce over. Garnish with snow pea sprouts or watercress.

Tip
The sauce will be quite runny. If you prefer a thicker sauce, remove the pork to the Thermoserver, add 2 tsp cornflour to TM bowl and cook for 5 mins / Varoma / speed 1, MC off to reduce slightly.

Really enjoyed this meal.
Trying this baby tonight but I did reduce the wine to 1/2 the amount and used prunes from a can because I could find dried. Fingers crossed.
I felt it tasted to alcohol like.. mash on the other hand was perfect
