Rick's Favourite Curried Chicken
- 60 g Butter
- 2 brown onions, (Quartered)
- 1.5 dsp Curry Powder
- 60 g apricot jam, (Store bought or your own)
- 60 g fruit chutney, (Store bought or your own)
- 70 g tomato sauce
- 240 g mayonnaise
- 250 g Cream, Coconut Cream or Greek Yoghurt
- 500 g diced chicken
- 350 g long grain rice
- 1000 g water
- 20 g olive oil

- Add onion to your TMX bowl and chop 5sec/sp5.
Scrape down sides of bowl and insert butterfly. (Butterfly to the left, high blade to the right)
Add butter and saute 10min/120de/sp2.
Add curry powder and saute 1min/100deg/sp2.
Add tomato sauce, apricot jam and fruit chutney to your TMX bowl and mix 10sec/sp2.
Set aside to cool.
Remove butterfly. Wash and dry bowl.
Add to your TMX bowl water and olive oil.
Place simmering basket into TMX bowl and weigh in rice. Stir well to wet the rice.
Place your diced chicken into your varoma bowl making sure to leave enough steam holes free.
Place varoma onto your TMX and cook 20mins/varoma/sp4.
Once rice is cooked set aside into your Thermoserver.
If chicken isn't cooked through continue cooking for a further 10mins/varoma/sp4.
Set chicken aside.
Wash and dry bowl.
Insert butterfly and add to your TMX bowl, reserved cooled curry, mayonnaise, cream and diced chicken and cook 18mins/100deg/soft speed/reverse.
Serve with your reserved rice.
Tip
You can also serve the curry with mashed potato or baked potato.
If your cooking for a larger family your can easily double the chicken. Please adhere to your user guide for maximum quantities.
I'm lucky enough to have 2 bowls so I utilise both bowls rather than wash and dry one bowl.
This is a really sweet curry & can be frozen.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Yum. I love this curry chicken. It's a sweet curry. Not like other curries I've tried.
