Ingredients

Shoarma Spice Mix

  • 2.5 tsp cumin seeds, (or 2 tsp ground)
  • 2.5 tsp coriander seeds, (or 2 tsp ground)
  • 1/2 tsp whole cloves, (or 1/4 tsp ground)
  • 3/4 tsp whole black pepper corns, (or 1/2 tsp ground)
  • 1 tsp paprika
  • 2 tsp Garlic powder
  • 1/2 tsp ground ginger
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ground cinnamon

Meat and Shoarma Marinade

  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 teaspoons Shoarma Spice Mix, (see above)
  • 1 teaspoon salt
  • 700 grams meat of your choice, (chicken, lamb, minute steak or mince)
  • 1 onion, sliced

Garlic Sauce (option 1)

  • 2 cloves garlic
  • fresh parsley, (small amount)
  • 120 g mayonnaise
  • 120 g sour cream

Garlic Sauce (option 2)

  • 2 cloves garlic
  • fresh parsley, (small amount)
  • 250 g Greek yoghurt
  • 40 g lemon juice
  • pinch salt

EXTRAS (to serve)

  • Pita Bread Pockets, (see my separate recipe for this)
  • tomato, diced
  • cucumber, diced
  • Lettuce, shredded
  • etc...

Recipe's preparation

    Make the Shoarma Spice Mix
  1. Add all whole seeds to the TM bowl and mill for 1 minute / speed 10.

    Add remaining spices and combine for 10 seconds / speed 5. Store in an air tight jar and use as required.

  2. Make Shoarma Marinade
  3. Combine the lemon juice, olive oil, shoarma spice mix and salt in a medium bowl.

  4. Finely slice meat into thin strips. combine meat and onions with the marinade for at least 1 hour, but preferrably overnight.

  5. Cook meat mixture in small batches in a frying pan until all cooked.

  6. Serve inside pita bread pockets (seriously, make your own! They are so very delicious!) with salad a dollop of garlic sauce of your choice.

  7. Make your choice of Garlic Sauce
  8. Add garlic and parsley to the TM bowl and chop for 3 seconds / speed 7. Scrape down walls using spatula and add remaining sauce ingredients. Combine for 10 seconds / speed 4. Store in the fridge for at least an hour for the flavours to develop.

Tip

My kids love Shoarma night (just like a taco night) because I let them fill their own pita pockets! Why not make two different meats so you have a choice? It's a great fun night with family and friends! Enjoy...
