Ingredients

Spicy Moroccan Lamb Stew

  • 2 tablespoons olive oil
  • 1 onion, white, Peeled & quartered
  • 2 carrots, peeled & chopped into small circular pieces
  • 1 celery stalks, 3 cm pieces
  • 3 garlic cloves
  • 1000 g lamb leg, Cubed
  • 1 bunch fresh mint leaves, Handful, plus extra to garnish
  • 1 tablespoon Ras el Hanout
  • 2 cm ginger, stem, peeled and finely chopped
  • 1 cans chopped tomatoes
  • 0.75 litre liquid vegetable stock, made from 1.5 tsp vegetable stock paste
  • 2 Sweet Potatoes, peeled at chopped to 2cm pieces
  • 2 tablespoon Harissa paste

Recipe's preparation

  1. Add the onion & garlic & chop 3s speed 4
    Add the carrot, celery and sauté 3 min Counter-clockwise operation"Counter-clockwise operation" sp Gentle stir setting"Gentle stir setting" temp varoma
    Set aside. No need to wash the Closed lid"Closed lid"
  2. Add another tbsp olive oil and the lamb and cook Counter-clockwise operation"Counter-clockwise operation" sp 1.5, 10 min 120°C. Check meat is browned all over.
    Add the saved cooked veg, mint, ras el hanout and ginger and
    cook Counter-clockwise operation"Counter-clockwise operation" sp 1, 2 min, 120°C.
  3. Add the tomatoes and vegetable stock mix and cook Counter-clockwise operation"Counter-clockwise operation" sp 1, temp 90°C, for 1h.
    Place simmering basket on top of mixing bowl in place of measuring cup.
  4. Add the sweet potatoes and cook for further 25 min, sp 1 Counter-clockwise operation"Counter-clockwise operation" 90°C.
  5. Transfer to Thermoserve and stir in harissa to taste.
    Garnish with mint before serving.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
