Ingredients
Thai Chilli Chicken and Basil
- 1 Handful fresh basil
- 1 handful fresh coriander, leaves and stalks chopped
- 1 onion, peeled and quartered
- 1 red chilli, deseeded
- 1.5 tbsp oil
- 1 tbsp fish sauce
- 1 tbsp sweet chilli sauce
- 1 tbsp Kecap Manis
- 800 - 1000 g chicken breasts in 1.5cm pieces
- 400 g coconut milk or coconut cream
- fresh coriander leaves, for garnish
- 1 red chilli, sliced

Place fresh herbs into TM bowl and chop for 4 seconds on speed 6. Set aside.
Place onion and chilli into TM bowl and chop for 5 seconds on speed 7.
Add oil and saute for 5 minutes at 100C on speed 1.
Add fish sauce, sweet chilli sauce, Kecap Manis, basil and coriander and cook for 1 minute at Varoma temperature on "Counter-clockwise operation" + speed 1.
Insert Butterfly. Add chicken and coconut milk and cook for 10 minutes at 100C on REVERSE + speed soft until chicken is tender and cooked through.
Garnish with coriander leaves and sliced chilli and serve with steamed Jasmine rice.

Really good and easy recipe. I had about 400g chicken and added bok Choy at the end. It was delicious.

First time making this I was shocked that I could make a Thai curry that tastes just like I get from the restaurants!! It's amazing!!
Smooth flavour, I used 300 ml of coconut milk and was still plenty of liquid. can add more chilli for added fire and I also added beans and carrots in last few minutes to sneak extra veg in for family. will try with thigh fillets as breast chunks/slices were starting to dry. All in all, delightful and popular with all. Thanks
Very tasty meal, added snow peas two mins before dish finished. Also added garlic, ginger & kaffir lime leaves. A real favourite.
Quick easy meal - I used noodles and added vegies and extra basil, chilli and included garlic and ginger. Yum!

I used Thai basil and the flavours were amazing. I would probably purée the onion more (fussy husband). Great recipe!
Delicious! Loved it. This also went down with my incredibly fussy kids, which shocked me! I was thrilled. Next time I might try using chicken thigh.
