Ingredients

Green curry paste

  • 10 pieces green chillies, fresh
  • 1 teaspoon cumin ground
  • 2 stalks lemongrass
  • 2.5 cm galangal
  • 5 pieces Kaffir lime leaves
  • 4 --- shallots, peeled
  • 5 cloves garlic peeled
  • 1 bunch Coriander, roots and leaves
  • 1 bunch basil
  • 2 teaspoons shrimp paste, Optional

Green Chicken Curry

  • 150 g coconut cream
  • 3 tablespoons green curry paste
  • 500 g chicken thigh fillet, cubed
  • 350 g coconut cream
  • 2.5 tablespoon fish sauce
  • 1 tablespoon palm sugar, Or brown sugar
  • 350 g Thai eggplant, or regular eggplant, chopped
  • 50 g Thai Pea Eggplant, or Peas
  • 50 g galangal, fresh root, sliced
  • 5 pieces Kaffir lime leaves, torn
  • basil leaves, fresh, for garnish
  • 1 piece red chili, sliced for garnish
  • 10 pieces Small button mushrooms
  • 1 tablespoon TM vegetable stock concentrate
  • coriander, fresh, for garnish

Recipe's preparation

    Green curry
  1. Place all ingredients into bowl and and blend on speed 9-10 until a paste consistency is achieved. 

    This recipe makes enough paste for 3-4 batches of curry and freezes very well. Freeze paste in ice cube trays and place frozen blocks in ziplock bags for future use. 

  2. To make curry: 

    Place curry paste and 150g of coconut cream into bowl and cook 3 min/Varoma/speed 1 

    Add remaining coconut cream, lime leaves, galangal slices and cook 7 min/100C/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting"

    Add chicken and stock concentrate and cook 10 min/100C/Counter-clockwise operation"Counter-clockwise operation" /speed 1 add some water if required but the chicken does release some liquid on cooking.

    Add sugar, fish sauce, eggplants and mushrooms cook 5 min/100C/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting"

    Garnish with fresh basil, coriander and sliced red chillies. Serve with steamed rice.

    This curry paste is absolutely amazing! Become a staple in our household. I add extra chilli to my own bowl so the kids are ok with it and mix and match the veggies with what I have in the fridge

    This was absolutely amazing! I halved the chillis in case it was too hot for the kids and it was fine. I'll be making again for sure!

    This is the easiest and best green curry I've ever made. It's delicious and is great to freeze. I use prawns, fish or chicken And they're all delicious!

    Just wanted to check before doing, was it 10 green chillies? not sure what pieces means, is it with or without seeds. I usually use seeds but like it hot?
