- 750 grams of chicken breasts, sliced length ways in to around 2cm strips
- 1 heaped tablespoon of ground cumin
- 2 carrots
- 1 bunch of aspargus, chopped into bite size pieces
- 1 cup of sugar peas, sliced into bite size
- 1 Cup of bean sprouts
- 1 red capsicum, thinly sliced
- 1 head of cos lettuce or your choice of mixed salad leaves
- 1 red onion, thinly sliced
- DRESSING
- 3/4 cup of olive oil or oil to your choice
- 1 heaped teaspoon of lime zest
- 4 limes juiced
- 1/4 cup of corriander - sub for parsley if you do not like it, finley sliced
- 2 level teaspoons of chilli or one teaspoon of chilli flakes
- 2 level tablespoons of fish sauce
- 1 level tablespoon of sugar
- 3 cloves of garlic, crushed
- 2 level tablespoons of fresh sliced mint

Place sliced chicken breast into a bowl and sprinkle with cumin - set aside
Make the dressing in a screw top jar and set aside - shaking occasionally
Prep the salad into a bowl except for the sugar peas and asparagus and with a vegetable peeler peel the carrots and keep peeling into long thin strips - toss all ingredients lightly
CHICKEN
Fill your bowl to 1.5 litre mark - place chicken in the Veroma trays and cook 25 minutes Veroma Speed 4 -- place cooked chicken into a thermosaver to keep warm
With out washing the Varoma tray add the sugar peas and asparagus to the bottom bowl and cook 6 minutes, Veroma, speed 4 --- refresh under cold water for around 40 seconds using your tray as a colander - drain giving a little shake to get of excess water - place into the salad bowl and toss lightly
Plate up your salad into bowls or on plates
Slice the chicken and place on top of the salad and shake the dressing and with a spoon pour the dressing over the chicken and salad

Very nice, however the taste of olive oil was a bit too strong, overwhelming the other flavours a bit. We cooked medium rare steak instead of chicken.
