Ingredients

Capsicum, Tomato and Chilli Chutney

  • 500 grams of tomatoes, peeled
  • 2 large red capsicums, seeded and roughly chopped
  • 1 red onion
  • 2 cloves of garlic, peeled
  • 2 bay leaves
  • 100 grams of white wine vinegar
  • 100 grams of brown sugar
  • 1/2 level teaspoon of chilli flakes

Recipe's preparation

  1. To peel tomatoes - cut a cross on the bottom of each tomato and place in a large bowl - pour boiling water over them and let them sit for a couple of minutes - tip off water - the skins should now slip of in your fingers - also cut the core out of the top - cut the tomatoes into quarters, and leave in the bowl


    Add to the Thermomix bowl onions, garlic and chop 4 seconds, speed 6
    Add to the bowl the capsicum and chop 4 seconds, speed 5
    Add the tomatoes, bay leaves, chilli, vinegar and sugar - cook 30 mins, 100 deg speed 2, MC off
    Scrape down the bowl and repeat
    Check the chutney as very ripe tomatoes will give a lot of juice if it is a little runny due to the juice of the tomatoes cook for a further 15 mins

    NOTE I had the MC off with no basket on the top and had just one tiny splatter at the very end

    Pour into stealized bottle and enjoy - serve at a BBQ, Cheese/ meat platters etc

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

    My husband said it wasn't spicy enough for him, next time I will double the chilli, that will shut him up.
    This is a very tasty chutney, so easy and simple to make. Will also add this to the list of to make for Christmas hampers

    I Absolutely loved this and my firends enjoyed it to. I had it on bread a lone and ate it that way while my friends had told me they had it on steak and chicken. They've asked for more tmrc_emoticons.).
    I used fresh chilli rather than flakes with the same meaurement and found just a very slight bite in it. I'm going to add just a tad more next time I make it to see how much of it bite it has tmrc_emoticons.).

    we loved this recipie. In addition we added 1/2 a tsp curry powder & 1/2 tsp mustard powder and 4 tsp smoky paprika. We ended up cooking this on the stove top as we were bottling many chutneys at the time

    Simple easy chutney to make. Makes about one jar and the last two times I have seal the jars, but it gets eaten very very quickly so am going to just leave unsealed this time.
    i cut down the sugar to 60g & used half & half of Apple cider vinegar & wht wine vinegar.
    Most ingredients are fresh from my garden and this adds to the delish flavour.
