Ingredients

Brown Rice and Chicken Salad with Asian style dressing

  • 300 grams of brown rice
  • 600 grams cooked chicken roughly diced, or how ever much you have thats left over
  • 1 cucumber, sliced in half then half again and diced
  • 1 Capsicum, diced
  • 1 carrot, ribbons
  • 10 cherry tomatoes, cut in half
  • 1 handful of corriander or parsley, roughly chopped
  • 2 spring onions, sliced
  • 30 grams of olive oil
  • Asian dressing
  • 1/4 cup of soy sauce
  • 2 level teaspoons of sesame oil
  • 2 level teaspoons of olive oil
  • 2 level teaspoons of rice wine
  • 2 heaped teaspoons of brown sugar
  • 1 lime or small lemon juiced
  • 2 cloves of garlic
  • 2 cm piece of fresh ginger or 1/2 teaspoon of powdered

Recipe's preparation

  1. Add 1500 grams of water to your bowl, 30 grams of olive oil and the basket - place the rice in the basket and swirl with the spatula, place the lid and measuring cup on - cook 25 mins, 100 deg, speed four
    Place the rice into a bowl to cool
    Dressing
    Rince the jug and chop the garlic and ginger 5 seconds speed 6, scrape down the bowl, add all the dressing ingredients and blend 30 seconds speed 2 - set aside
    When the rice has cooled add the chicken and salad items and pour over the dressing and toss through

    This is my go to with left over chicken, sliced pork etc and I use what ever salad items I have in the fridge - this is also fabulous the next day for lunches

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

    A very good salad for most cold meats. I like it a lot, especially the dressing on the first day. I had it for lunch on day two and still very good.
