Ingredients

Koftas

  • 1 Small brown onion, quartered
  • 3 garlic cloves
  • 1/2 tablespoon olive oil
  • 180 g mushrooms, halved
  • 420 g tin kidney beans, drained
  • 1 tsp smoked paprika
  • 1 tsp cumin ground
  • 1 tsp Ground Coriander
  • 1/2 tsp chilli powder or flakes, adjust to preferred taste
  • Salt and pepper, to taste
  • olive oil spray

Pistachio Pesto

  • 2 tbsp unshelled natural pistachios, (not roasted or salted)
  • 5 sprigs fresh parsley
  • 6 leaves fresh basil
  • 3 sprigs coriander
  • 1 1/5 tbsp olive oil

Recipe's preparation

    Koftas
  1. Preheat the oven to 180C (170C fanforced)

     

  2. Place onion and garlic into TM bowl. Chop for 4 seconds on speed 7. Scrape down bowl and add olive oil and saute at 100C on speed 1 for 3 minutes. 

     

  3. Add mushrooms and chop for 3 seconds on speed 7. Saute at 100C speed 1 for 5 minutes.

     

  4. Add spices, chilli flakes, kidney beans and salt and pepper. Mix speed 5 for 3 seconds until just mixed and the kidney beans are broken up but still visible.

     

  5. Form in to 8 Koftas, placing them right onto a lined baking tray. Spray lightly with olive oil spray and bake for 45 minutes (add more time if not quite done).

     

  6. Pistachio Pesto
  7. While the koftas are baking, wash and dry TM bowl. Add all the indgredients for the pesto into the bowl and mix speed 6 for 3 seconds adding 2 seconds as required to make the pistachios finer, scraping down bowl between go's.

    Sprinkle over cooked koftas and eat with your choice of veggie accompanyment.

     

Tip

This recipe was adapted from a non TM recipe by Becca from amuse-your-bouche. I upped the spices and added a bit of chilli. 

 

I had these with sweet potato noodles (with was a really lovely combination) but they would lovely with cous cous or accompanied with a salad and flat bread.
