Ingredients

  • Please enter the ingredients in the following order:
  • 400 g brown rice, (raw ... in basket + 950 g Water ... 33 min + Veroma + Speed 4 - perfect)
  • 2-3 capsicums, (Red, Green or Yellow - mix up the colours)
  • 1/2 Cup Raisens (Soak in Hot Water for half and hour)
  • 1 can sliced peaches
  • 2 shallots/spring onions, or 1/ Red Onion
  • 1/2 Cup Mayonaisse (homemade is best)
  • Curry Powder, Cumin, Salt and Pepper to taste

Recipe's preparation

  1. 1.  Prepare you perfect rice and set aside to cool
    2.  Finely chop Shallot/Spring Onion/Onion - 5 sec on speed 6
    3.  Add Capsicum and coursely chop - 5 sec on speed 5
    4.  Add peaches and coursely chop - 5 sec on speed 4
    5.  Put all ingredient in bowl and mix
    6.  Add curry powder, cumin, salt and pepper to mayonaisse stir by hand to mix in - check the taste - looking for mild curry, undertone of cumin with a tang of s&p
    7.  Stir dressing into Salad and serve

    Always fabulous, makes a large salad, lasts well.

    This is really yummy and so easy to make. This will go into my favourites. I love it for lunch but will look forward to taking it to summer bbq's too.

    I made this and I liked it.  I used the rockmelon and added some fresh mint.  As an after thought I added some roughly cut celery which added a nice crunch.  yum.

    Rockmelon and Basil ... truly creative.  Sounds very refreshing.  Thanks for the suggestion.  And yes, excellent for any "bring and share" occasion.

    I substituted the peaches for rock melon and was rather enthusiastic when it came to chopping the veggies and melon thus resulting in a lot of juices. Rather than add mayo i chose a low fat option and added a handful of fresh basil.

    This really enhanced all the flavours and it was delicious. The recipe really does make heaps and is such a good idea for BBQ's etc.tmrc_emoticons.)

    In my excitement to publish my favourite recipe - I forgot to remove the template Potato and Carrots ... please DO NOT INCLUDE POTATO AND CARROTS ... I have not tested them in this recipe.

    So sorry, and I couldn't work out how to remove or edit the recipe once it was published.
